Dot Matrix Receipt Printers are impact printers which use ink ribbons and plain (Bond) paper rolls. They are common used as order printers in kitchens as they can print Single Ply (1Ply), Duplicate (2Ply) & Triplicate (3ply) paper rolls.

The reason why they work well in kitchens is because the paper can tolerate higher temperature areas near fryers and heat lamps.
